This Pasta I Have Shored Against My Ruins
1 eggplant, peeled, julienned into fat worms, and married with bonnes herbes, pepper, salt, and a pinch of nutmeg for half an hour.
10 brown mushrooms, sliced
3 tbs. each dark mushroom broth and olive oil
Sautee all that until the eggplant is cooked to your taste.
500 g. dry linguine (1 package or recipe's worth)
200 g. fresh pesto (about 1/2 cup)
100 g. asiago cheese, grated (a large handful)
Cook the pasta and toss with the cheese and pesto first, then toss with the eggplant. Serve with more asiago, bruschetta, and sauvignon blanc, and then good gelato. But I forgot the gelato.
